I’ve been preparing extra food over the past few days. We are going to visit an elderly relative who lives on his own so I have cooked him a few meals to pop in his freezer and I am taking some prepared food to help make the trip more leisurely and relaxed.
Here is a recipe you might like to try one day…..it is a firm favourite around here:
Spiced Apple Cake ( sugar free)
2 medium apples, peeled, cored and sliced into a large bowl.
115gms of melted butter or olive oil based spread for a dairy free option
1 egg
1/2 cup of raisins or sultanas
3 Tbsps of pineapple juice
1/4 cup of tinned, diced pineapple
1 3/4 cup of plain flour ( one and three quarter cups of flour)
1/2tsp of vanilla, nutmeg, cinnamon, mixed spice and baking soda.
Mix melted butter and beaten egg into apple mixture. Add sifted flour together with all other ingredients and fold into fruit.
Grease a ring tin and bake for approximately 55 mins at 180C
It can also be baked as muffins.
